Ingredients


For the Chicken (or Lamb):


1 whole chicken (cut into pieces) or 1 kg lamb (on the bone)


2 tbsp vegetable oil


2 onions, finely chopped


4 cloves garlic, minced


2 tomatoes, chopped


1 tbsp tomato purée


1 tsp ground turmeric


1 tsp ground cinnamon


1 tsp ground cumin


1 tsp ground coriander


½ tsp ground cardamom


½ tsp black pepper


1 cinnamon stick


4–5 cloves


2–3 cardamom pods


1 dried lime (loomi), pierced


Salt to taste


5 cups water



For the Rice:


2 cups basmati rice, rinsed and soaked for 30 minutes


2 tbsp raisins (optional)


2 tbsp toasted pine nuts or almonds (optional)


Chopped fresh coriander or parsley for garnish

Instructions


Step 1: Sauté the Aromatics


Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until golden brown. Stir in the garlic and sauté for another minute until fragrant.


Step 2: Cook the Chicken or Lamb


Add the chicken or lamb pieces to the pot and sear until browned on all sides. Then add the tomatoes and tomato purée. Stir well and cook for 5–7 minutes until the tomatoes begin to break down.


Step 3: Add the Spices


Add the ground spices (turmeric, cinnamon, cumin, coriander, cardamom, and black pepper) along with the cinnamon stick, cloves, cardamom pods, and dried lime. Stir well to coat the meat and aromatics in the spices.


Step 4: Simmer the Broth


Pour in about 5 cups of water and season with salt. Bring the mixture to a boil, then lower the heat and cover. Let it simmer for 45 minutes to 1 hour (less time for chicken, more for lamb), or until the meat is tender and fully cooked.


Step 5: Remove the Meat


Once the meat is cooked, carefully remove it from the pot and set it aside. Keep it covered to stay warm. Strain the broth if desired, to remove whole spices and onions for a cleaner look.


Step 6: Cook the Rice


Measure out 4 cups of the hot broth (add water if needed to make up the quantity). Return the liquid to the pot, bring it to a gentle boil, then add the soaked and drained rice. Stir once, cover, and cook on low heat for about 15–20 minutes, or until the rice is fluffy and all the liquid is absorbed.


Step 7: Grill the Meat (Optional)


For extra flavour, you can grill or oven-roast the cooked chicken or lamb for a few minutes until the skin is crispy and slightly charred.


Step 8: Assemble the Majboos


Fluff the rice gently with a fork. Spoon the rice onto a large serving dish and place the meat pieces on top. Garnish with toasted nuts, raisins, and fresh herbs if using.
