🛒 Ingredients (Makes around 25 small gougères)


250ml water


60g unsalted butter, cubed


1/2 tsp salt


Pinch of ground black pepper


1/4 tsp ground nutmeg (optional)


150g plain flour


4 medium eggs


100g Gruyère cheese, grated (or mature cheddar if preferred)


Extra grated cheese or egg wash for topping (optional)

👨‍🍳 How to Make Gougères – Step-by-Step


1. Prepare the Oven and Tray


Preheat your oven to 200°C (fan 180°C) / Gas Mark 6. Line a large baking tray with non-stick baking parchment.


2. Make the Choux Pastry Base


In a medium saucepan, combine the water, butter, salt, pepper and nutmeg. Bring to a gentle boil over medium heat until the butter melts completely.


Remove from heat, add the flour all at once, and stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.


Return the pan to a low heat and continue stirring for 1–2 minutes to dry out the dough slightly. It should look smooth and satiny.


3. Incorporate the Eggs


Allow the dough to cool slightly for 2–3 minutes. Beat the eggs one at a time into the dough, mixing well after each addition. You can use a wooden spoon, electric mixer, or food processor for ease.


The mixture will look like it’s separating at first – keep mixing until smooth and glossy.


4. Add the Cheese


Stir in the grated Gruyère until evenly combined.


💡 Tip: You can also mix in chopped herbs like thyme or chives for added flavour.


5. Pipe or Spoon the Dough


Using a piping bag or two spoons, drop small rounds (about the size of a walnut) onto your prepared baking tray, leaving space between each to allow for rising.


Optionally, brush the tops with a little beaten egg or sprinkle with extra cheese for a golden finish.


6. Bake Until Golden


Bake for 20–25 minutes or until the gougères are puffed up, crisp and golden. Do not open the oven door during baking, as this can cause them to collapse.


Allow to cool slightly before serving warm – they’re best eaten fresh out of the oven!
