What Is Calamari Ripieni?

“Calamari” means squid in Italian, and “ripieni” translates to stuffed. This dish is all about flavour and texture: the tender squid encases a savoury stuffing, often made with breadcrumbs, garlic, parsley, and sometimes anchovies or chopped squid tentacles.

Calamari ripieni can be prepared in two main ways: braised gently in tomato sauce, or baked in the oven with olive oil and white wine. Both methods yield delicious results, so it comes down to personal preference.

How to Make Calamari Ripieni – Step by Step

Step 1: Clean the Squid

If not pre-cleaned, remove the head and innards from the squid tubes. Reserve the tentacles and chop them finely. Rinse the squid tubes and pat them dry with kitchen paper. Set aside.

Step 2: Make the Stuffing

In a bowl, mix the breadcrumbs, chopped garlic, parsley, Parmesan, chopped tentacles, anchovies (if using), and capers. Stir in the beaten egg and olive oil until the mixture is moist but not soggy. Season with salt and pepper to taste.

Step 3: Stuff the Squid

Carefully spoon the stuffing into each squid tube, filling them about ¾ full to allow for expansion during cooking. Seal the open ends with a cocktail stick or toothpick.

Step 4: Cook the Calamari

Option 1 – Braised in Tomato Sauce (Traditional Method):

1. In a deep frying pan, heat 2 tbsp olive oil and gently fry the onion until soft.

2. Add the garlic and cook for 1 minute more.

3. Pour in the white wine and let it reduce slightly.

4. Stir in the chopped tomatoes, season with salt and pepper, and add basil if desired.

5. Gently place the stuffed squid into the sauce. Cover and simmer on low heat for 30–40 minutes, turning halfway through.

Option 2 – Oven-Baked Calamari:

1. Preheat the oven to 180°C (160°C fan/gas mark 4).

2. Place the stuffed squid in a lightly oiled baking dish.

3. Drizzle with olive oil and a splash of white wine.

4. Cover with foil and bake for 25–30 minutes, then remove foil and bake for a further 10 minutes to brown slightly.

Serving Suggestions

Calamari ripieni is typically served warm, accompanied by crusty bread, a fresh green salad, or a simple side of sautéed spinach. If braised in tomato sauce, spoon extra sauce over the top for added richness.

Tips for Perfect Calamari Ripieni

Don’t overfill: Leave space in the squid to prevent bursting during cooking.

Use fresh squid: Fresh, medium-sized squid work best for even cooking and tender texture.

Add variety to the stuffing: You can experiment by adding chopped prawns, sun-dried tomatoes, or even rice.

Secure the squid: Use cocktail sticks or toothpicks to keep the filling inside.
