1. Prepare the Broth


Place the beef in a large saucepan with 2 litres of cold water. Add the halved onion, bay leaf, and a pinch of salt. Bring to the boil, then reduce to a simmer. Skim off any foam that rises to the surface.


Simmer gently for 1.5 to 2 hours until the beef is tender and the broth is rich. Once cooked, remove the meat, discard the onion and bay leaf, and strain the broth. Cut the meat into bite-sized pieces and set aside.
