🥣 **Bharva Bhindi (Stuffed Okra) Recipe**

**For the stuffing:**
* 2 tbsp besan (gram flour)
* 1 tsp coriander powder
* 1 tsp cumin powder

* ½ tsp red chilli powder (adjust to taste)
* ½ tsp amchur (dry mango powder) or a few drops of lemon juice
* Salt – to taste
* 1–2 tsp oil
**For the main dish:**
* 250g bhindi (okra), washed and dried completely
* 2–3 tbsp oil (for cooking)
* Pinch of hing (asafoetida)
* ½ tsp mustard seeds (optional)

🟢 1. **Prepare the Bhindi:**
* Wash the bhindi and dry completely with a towel.
* Trim both ends and slit each bhindi lengthwise, without cutting through. It should open like a pocket.
🟠 2. **Make the Stuffing:**
* In a bowl, mix all the stuffing ingredients.
* Add 1–2 tsp oil to bind the mixture slightly.
* Taste and adjust seasoning.
🔴 3. **Stuff the Bhindi:**
* Carefully stuff each bhindi with the masala mixture using your fingers or a spoon.
* Press gently to ensure it holds.
🔵 4. **Cook the Bhindi:**
* Heat oil in a pan on medium flame. Add hing and mustard seeds (if using).
* Add the stuffed bhindi gently and spread them evenly.
* Cover and cook on low flame for 10–15 minutes, stirring occasionally.
* Cook uncovered for 5 more minutes to make them slightly crispy.
